I can run it on Crossover Office 5.0 as well. What's really peculiar is the first time I load it, it starts, shows the main window and vanishes - the second time I try it loads and stays and you can browse through the settings. I do get the same kind of connection error that you're reporting there. Looks like it's closer to working that way - I'd be a bit doubtful if any of the audio "stuff" would work but who knows?

Crossover Office version 5.0 can run google talk without crashing. However I cannot seem to connect, I get an error message saying 'Could not authenticate to server'. Its closer to working but not quite there yet.

After install, it brings the main window. It looks unresponsive, but actually all that doesn't work is keyboard input. If you copy/paste the username/password, it is quite happy to take them, but then it crashes:
process tid prio (all id:s are in hex)
00000008 (D) C:\Program Files\Google\Google Talk\googletalk.exe
        00000017 0

Yeah I've tried the same thing using cvswine. At work the client bombs out with some error about ntdll. However on my home machine (again, cvswine) I think it's stable, although I didn't really have time to actually use it before I had to rush off. I might try X11 forwarding later and see what happens.
